I was out to dinner with some of my colleagues and we got to talking about interesting flavor combinations after we had placed our order for Buttered Popcorn Ice Cream (which, by the way, was AMAZING!)

One combo that came up was apple pie and cheddar cheese. To be perfectly honest, I have never actually slapped a piece of cheese on my apple pie before, but I can totally see how it would be yummy. I mean, they make snack kits with apples and cheddar in them all the time, so why not do the same but with cinnamon cooked apples rather than raw?
I decided then and there that cheddar and apple would be my next pancake combo.

You know what? It worked! I sauteed some apples, butter and cinnamon for the “apple pie,” filled the pancakes with cheese and chopped apples and voila! Next time, I’ll get a little more daring and add more cheese than I did. But, I’d count this recipe as a success! (I guess I should probably try the “real” combo first though, eh?)

Dry Ingredients:
1 cup whole wheat flour
½ cup cake flour
¼ cup dry oats
¼ cup slivered almonds, crushed
2 tsp baking powder
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
Wet Ingredients:
2 eggs
1 cup buttermilk (I used milk + lemon juice)
1 TBS agave sytup
1 TBS melted butter
½ tsp vanilla extract
Fold in:
½ cup shredded cheddar cheese + extra for garnish
½ apple, finely chopped
apple pie topping:
1 ½ apples, roughly chopped
2 TBS sugar
1 TBS butter
½ tsp cinnamon
(corn starch at the end for added consistency)
Put all into a pot over low heat, stirring occasionally. Cook until apples are soft (not mushy)!
